Carol Sapp, RD LD MBA - CEO

Carol Sapp is the CEO of Health Technologies. Since it’s inception in 1994, Carol has led operations and provided leadership oversight for Health Technologies. Carol’s extensive experience in nutrition care management, passions for new technology trends, and focus on resident care create a perfect background for driving innovative services from Health Technologies. Carol is a graduate of Central Missouri State University where she earned her degree in Dietetics. She received an MBA from Washington University in St. Louis. Carol is an avid skier and is rarely without a quad grande Americano in hand.

Kim Fremont, RD LD MEd - Sr Vice President, Consulting
 
Kim has over 35 years of experience in all aspects of nutritional care and foodservice. Kim is responsible for overseeing consulting services and the Health Technologies consultant dietitian network.  Kim’s background includes a Bachelor of Science in Medical Dietetics from the University of Illinois, Chicago and a Master’s in Education and Instructional Technology from Southern Illinois at Edwardsville. Kim loves cooking for her friends and family as well as boating and skiing.

Amy Bollam, RD LD MPS - Vice President, Products and Training

Amy is the Vice President of Products & Training and a food enthusiast. In her dietetic career, Amy has focused in food service management including areas of cost control, staff development, safety, sanitation, and compliance.  Amy holds Bachelor’s degrees in Dietetics and Nutrition and Women’s and Gender Studies from the University of Dayton, and Master’s degree in Human Resources from the Pennsylvania State University. Amy believes in eating dessert first and enjoys traveling with her husband and two sons.

Jay Bonning - Technical Director

Jay has a passion for technology and has been a leader in the field for more than 20 years. He specializes in finding creative software solutions to make everyone’s lives easier, and in the power or software to transform all aspects of business life. Jay holds a Bachelor of Science in Computer Science from Bowling Green State University. In his time away from tech, Jay can often be found around a table playing games with friends.

Lindsay Shazly, RDN LD MS - Director of Menu Programs

Lindsay has over a decade of experience and driving excellence in clinical nutrition, dining services, menu development, and health education. Her deep knowledge of federal and state regulations allows her to skillfully guide clients with steadfast compliance and best-in-class menu and dining solutions. Lindsay earned her Master’s degree in Nutrition Communication from Tufts University and her Bachelor’s degree in Consumer Journalism from the University of Georgia. She has served as President of the South Carolina Academy of Nutrition and Dietetics and was awarded the 2019 Outstanding Dietitian of the Year by the state of South Carolina.

Michael Washburn - Controller

Mike Washburn supports the DiningRD team with expertise in accounting and operations. Prior to joining the DiningRD team, Mike has worked extensively in healthcare operations. Mike has a degree in Accounting from Missouri Western State University. In his free time, Mike loves all things St. Louis sports – Go Cardinals! Go Blues!

Alyssa Ailey, RD LD MS - Customer Support Specialist

Alyssa started as a consultant for Health Technologies and transitioned to a full-time menu department team member. Alyssa is a pro at developing menus and assisting customers.  She received her Bachelor of Science in Dietetics from Missouri State University and completed her Dietetic Internship and Master’s Degree at Illinois State University. In her free time, Alyssa likes trying fun recipes (and pretending to be a fancy food blogger), playing with her dog, enjoying outdoor activities and she could probably quote a line from the TV show Friends.

Rachel Allard, RD LD - Regional Clinical Support Manager

Rachel provides support in the clinical and foodservice areas for clients as well as consulting dietitians across the Midwest region. Rachel attended Southeast Missouri State University earning her Bachelor's of Science in Dietetics. In her free time, Rachel enjoys spending time outdoors hiking, traveling to new places, reading a good book, and being at home with her two cats and dog.

Katie Cameron, RD LD MBA - Customer Support Specialist

Katie started her career at DiningRD as a consultant dietitian. With a passion for senior living care, Katie joined the Menu Support team as a Support Specialist. From recipes and menus to technology and regulatory compliance, Katie is a wealth of knowledge to DiningRD clients. Katie has an undergraduate degree in Dietetics from the University of Central Missouri and an MBA from Lindenwood University.

Rene Miller - Accounting Manager

Rene has been with Health Technologies from the very beginning in 1994. With more than 30 years of experience, Rene is responsible for accounting procedures at Health Technologies. She is always eager to workout solutions and reconciliations. Rene has been happily married for 34 years. She and her husband have 2 daughters and 4 grandsons. Rene enjoys trying Pinterest recipes and crafts, reading, and spending time with her family.

Cindy Monica, CDM CFPP - Customer Support Specialist

Cindy Monica is the Menu Technician and Customer Support guru for Health Technologies. Cindy provides comprehensive virtual training for new customers as well as day-to-day technical support for the Dining Manager Menu System. Cindy received her Associates in Applied Science Degree in Dietetic Technology from Florissant Valley Community College and is a Certified Dietary Manager and Certified Food Protection Professional. Needing menu help or maybe just a friendly voice? Cindy is a phone call away! In her free time, Cindy is spending time with her family, playing Tripoli, and watching St. Louis Cardinals baseball.

Mary Roberson, RD LD - Regional Clinical Support Manager

Mary is a Regional Clinical Support Manager for Health Technologies. She graduate of Eastern Illinois University and has worked extensively in the long term care. Mary is a tenured Health Technologies dietitian consultant assisting long term care clients as well as consultant dietitians with support. When she’s not tending to the nutritional needs of clients, Mary is busy managing her family’s 266 acre farm in southern Illinois including 30 head of cattle and her 2 sweet puppy dogs.

Tiffany Vieth, RD LD - Regional Clinical Support Manager

Tiffany is a dynamic RD with experience in nutrition support, long term care consulting, foodservice systems, and more. Tiffany graduated from the University of Nebraska with a degree in Nutritional Science and Dietetics. As a regional manager at DiningRD, Tiffany supports both consulting as well as the Dining Manager menu software programs across the North Central and Western regions.
